Lemon Poppy Seed Protein Loaf
Anything with a bit of lemon zest gets a big ‘yes’ from me. However, one of my favourite combinations is lemon and poppy seed. It’s even better with a hint of vanilla.
I made this Lemon Poppy Seed Protein Loaf and I absolutely love it. It’s low in calories and high in protein. Try it out and let me know what you think!
Ingredients for the Loaf
One cup of oat flour
Half a cup of almond flour
Two tablespoons of full cream OR low fat yogurt (the creamier the better)
One and half cups of almond milk
One tablespoon of poppy seeds
Five millilitres (5ml) of lemon essence
One tablespoon of lemon juice
One teaspoon of xylitol
Three tablespoons of egg whites
One scoop of vanilla protein powder
Method
Preheat your oven on 180 °C
Mix all your dry ingredients in a medium-sized bowl
Whisk together all your wet ingredients
Add the wet ingredients to your dry ingredients and mix well
Spray a medium-sized dish with Cook & Bake
Bake for about 25 to 30 minutes
Ingredients for the icing
One and a half scoops of whey vanilla
One teaspoon of xylitol
One teaspoon of lemon juice
One teaspoon of vanilla essence
Grated lemon zest for decoration
Mix all the ingredients together and add three tablespoons of water (the consistency should be relatively thick). Poke several holes into the baked loaf and pour the icing over the loaf.
